And that means it is also time for having fresh game on the table. Dove can be a little tricky to cook. It is very lean, small and can be very &#8220;gamey&#8221;.<\/p>\n<div id=\"attachment_96681\" style=\"width: 1034px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-96681\" title=\"BBQ Bacon Dove Bites - Recipe\" class=\"size-large wp-image-96681\" src=\"https:\/\/www.gunsamerica.com\/digest\/wp-content\/uploads\/2018\/09\/IMG_7440-1024x684.jpg\" alt=\"BBQ Bacon Dove Bites - Recipe\" width=\"1024\" height=\"684\" \/><p id=\"caption-attachment-96681\" class=\"wp-caption-text\">Bone in dove breasts all cleaned and ready to go.<\/p><\/div>\n<p>Here is one of my favorite recipes for dove breast.<\/p>\n<p>BBQ Bacon Dove Bites<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>Deboned Dove Breasts (how many you want to cook)<\/li>\n<li>1\/2 Slice of Bacon per Breast<\/li>\n<li>Sweet BBQ Sauce<\/li>\n<li>Spicy BBQ Rub<\/li>\n<li>1\/4 Cup of Kosher Salt<\/li>\n<li>1\/4 Cup of Brown Sugar<\/li>\n<li>1 Quart of Water<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Make a brine with the water, salt and brown sugar. I usually do not use a wet brine on most meats, but I have found that it really helps draw the blood out of the dove and takes some of the gamey taste away.<\/p>\n<p>Soak the dove breasts in the brine for at least 2 hours but no more than 4. If you leave them in the brine too long, they run the risk of being too salty.<\/p>\n<p>Remove from the brine, rinse the breast off under cold water and pat dry.<\/p>\n<div id=\"attachment_96682\" style=\"width: 1034px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-96682\" title=\"BBQ Bacon Dove Bites - Recipe\" class=\"size-large wp-image-96682\" src=\"https:\/\/www.gunsamerica.com\/digest\/wp-content\/uploads\/2018\/09\/IMG_7443-1024x768.jpg\" alt=\"BBQ Bacon Dove Bites - Recipe\" width=\"1024\" height=\"768\" \/><p id=\"caption-attachment-96682\" class=\"wp-caption-text\">Rolled in rub and waiting for the bacon coat.<\/p><\/div>\n<p>Roll the dove in a BBQ rub. I prefer one that is a bit spicy. This is a great place to experiment with making your own rub or trying different ones from the store.<\/p>\n<div id=\"attachment_96683\" style=\"width: 1034px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-96683\" title=\"BBQ Bacon Dove Bites - Recipe\" class=\"size-large wp-image-96683\" src=\"https:\/\/www.gunsamerica.com\/digest\/wp-content\/uploads\/2018\/09\/IMG_7444-1024x768.jpg\" alt=\"BBQ Bacon Dove Bites - Recipe\" width=\"1024\" height=\"768\" \/><p id=\"caption-attachment-96683\" class=\"wp-caption-text\">Wrapped in bacon. I mean, its bacon so its gotta be good, right?<\/p><\/div>\n<p>Wrap the breasts in bacon. I use a half of a normal thickness slice for this. Stretch the bacon out a little as you wrap it around the breast and you will not have to use a toothpick to hold it in place.<\/p>\n<p>Fire up your grill. I like to use a charcoal grill but I do not add any hardwoods for extra smoke flavor. Set your grill up for indirect cooking.\u00a0 We want the inside of the grill to be about 350-375 but we don&#8217;t want the fat from the bacon flaring up.<\/p>\n<div id=\"attachment_96684\" style=\"width: 1034px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-96684\" title=\"BBQ Bacon Dove Bites - Recipe\" class=\"size-large wp-image-96684\" src=\"https:\/\/www.gunsamerica.com\/digest\/wp-content\/uploads\/2018\/09\/IMG_7446-1024x768.jpg\" alt=\"BBQ Bacon Dove Bites - Recipe\" width=\"1024\" height=\"768\" \/><p id=\"caption-attachment-96684\" class=\"wp-caption-text\">On the grill! These are on a Big Green Egg with the plate setter in place for indirect cooking.<\/p><\/div>\n<p>Once your grill is up to 350, place the bacon wrapped dove breasts on grill and close the lid.\u00a0 After 7 minutes flip them.\u00a0 There should be a nice grill mark and the bacon should be cooked on that side.<\/p>\n<p>After the first flip, baste a small amount of a sweet BBQ Sauce on the breasts. Cook for another 7 minutes.<\/p>\n<div id=\"attachment_96685\" style=\"width: 1034px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-96685\" title=\"BBQ Bacon Dove Bites - Recipe\" class=\"size-large wp-image-96685\" src=\"https:\/\/www.gunsamerica.com\/digest\/wp-content\/uploads\/2018\/09\/IMG_7448-1024x768.jpg\" alt=\"BBQ Bacon Dove Bites - Recipe\" width=\"1024\" height=\"768\" \/><p id=\"caption-attachment-96685\" class=\"wp-caption-text\">Flipped and sauced.<\/p><\/div>\n<p>Flip them again and glaze the other side with the sauce. Cook for another 3-4 minutes until the BBQ Sauce has firmed up and caramelized.
