This will help\u00a0render the fat down more quickly during the cooking process.<\/p>\n<p>Grate the lemon and lime peels to create your citrus zest and mix with 2 teaspoons of fine sea salt. Then cut the lemons and lime into wedges.<\/p>\n<p>Season the cavity of the goose generously with salt and then rub the citrus mix well into the skin. Make sure to sprinkle some <a href=\"https:\/\/gunsamerica.com\/digest\/north-carolina-robbery-suspect-caught-with-loaded-gun-inside-body-cavity\/\" target=\"_blank\" class=\"clickTracking\" campaign=\"hunt365-roasted-goose-on-the-traeger-recipe\" title=\"Roasted Christmas Goose on the Traeger - Recipe\"  data-wpil-monitor-id=\"2069\">inside the cavity<\/a> as well.<\/p>\n<p>After you\u2019ve seasoned the outside of the bird &#8211; stuff the goose with sage, thyme, lemons, limes,\u00a0and apple wedges. Place goose directly on the grill grate and cook for 40 minutes. \u00a0Once your 40 minutes are up, brush the goose with honey and reduce temperature to 325 degrees F.<\/p>\n<p>Cook for 1.5\u00a0to 2 hours or until an instant-read thermometer inserted in the thickest <a href=\"https:\/\/gunsamerica.com\/digest\/hunt365-how-to-assemble-an-awesome-bivy-hunting-setup-part-2-water-food-and-backcountry-cooking\/\" target=\"_blank\" class=\"clickTracking\" campaign=\"hunt365-roasted-goose-on-the-traeger-recipe\" title=\"Roasted Christmas Goose on the Traeger - Recipe\"  data-wpil-monitor-id=\"2070\">part<\/a> of the breast reads 160 degrees F.<\/p>\n<p>Remove from grill, tent with foil and allow to rest for 30 minutes. Final internal temperature should be 165 degrees F in the thickest part of the breast.
